Avocado pesto

This great and delicious avocado pesto is ready in 15 minutes. In addition, it is super tasty and incredibly healthy.

Why do I like this dish so much?

All you need to make a great pesto is.

I´m a big fan of simple, healthy and quick dishes. Eating should remain enjoyable, but at lunchtime things can go faster right? However, it is important for me to cover all the nutrients in every dish event if it is fast or not. This avocado pesto recipe is perfect for it.

 

There are many different ways to cut an avocado. I developed a fast way ;)

Halve in the middle, remove the stone, cut the edges of each half and peel off the skin. :) Ready in 15 seconds. You can find a video on my instagram channel.

Avocados may be high in calories, but packed with good fats and nutrients.

Tip: Always cut off only the upper leaves of a basil bush.

It keeps growing like this.

Pesto
 1 Avocado
 One handful fresh basil
 Juice of 1/2 lemon
 1 tsp Salt
 1 tsp Pepper
 1 Garlic clove
 1 tsp Paprika powder
 ½ tsp Chopped chili pepper
 15 g Nutritional yeast
 45 g Cashew nuts
 100 ml Pasta water
Toppings
 200 g Pasta of choice
 50 g Cherry Tomatoes

1. Cook the pasta according to the package instructions. Season the water.
2. Mix all ingredients for the avocado pesto in a food processor until creamy.
3. Drain the cooked pasta and put it back in the pot.
4. Stir in the pesto.
5. Garnish the dish with fresh basil, tomatoes and parmesan.
