The best vegan banana bread

Do you believe me that I tried at least 10 different banana bread recipes until I finally found the perfect recipe? I'm really happy with this banana bread recipe and the taste is just great.

How does the banana bread get so fluffy?

The basic ingredients for this great banana bread are as follows

The game changer: Aquafaba. It can be whipped into a stiff egg white and ensures that our banana bread becomes extra fluffy afterwards. By the way, aquafaba is very common in vegan kitchens, especially when it comes to egg replacement when baking.

But how does the egg get fluffy? As you can see in the picture, the dish looks rather dry without yogurt. As soon as all the spices have been added to the pan and the tofu has turned color, take the pan off the heat, stir in the yogurt and serve the great vegan scrambled eggs.

I prefer to eat the banana bread with homemade peanut butter. Have you tried this before? All you have to do is roast 500g peanuts in the oven (30 minutes) and then put them directly in the blender. After 5 minutes you should have a super creamy peanut butter.

The baking time of the banana bread is very, very important. 180 degrees circulating air, 60 minutes is my recommendation. Each oven reacts slightly differently, so prick the middle of the bread with a toothpick after 50 minutes, as soon as it comes out dry, your banana bread is already ready.

 3 Very ripe bananas (mashed)
 2 tsp Vanille Extract
 75 ml vegetable oil
Bowl 2 (Buttermilk)
 90 ml Oat milk
 1 tsp juice of a lemon
Bowl 3 dry ingredients
 240 g Spelt flour
 1 tsp Baking Soda
 1 tsp Cinnamon
 100 g Erythritol
 ½ tsp Salt
Egg replacing
 90 ml Aquafaba

1. Preheat the oven to 180 degrees and place baking paper in a 23cm long baking tray

2. Mix together all the ingredients of the respective category. The aquafaba must be beaten until stiff for about 5 minutes.

3. Now mix all the ingredients together, ideally with a spatula.

4. Now put the dough in your baking pan and put it in the oven for about 50 minutes.

5. Check the consistency with a toothpick, if the toothpick is dry, the cake is ready.

6. The finished cake now needs a little rest, at least an hour in the refrigerator is recommended. However, the cake tastes best the next day.
