Chickpea Cookies

This recipe is definitely very unusual, but it’s a great way to make healthy snacks. The sweetness of course depends on the cocoa content of the chocolate. The higher this is, the less sweet the cookies will be. I recommend you an 85% chocolate. If you still want it sweeter, stir in some date sugar or erythritol to sweeten calorie-free.

Chickpea Cookie

Ingredients

  • 125g dark chocolate
  • 100g canned chickpeas

For this recipe, the chickpeas should be washed thoroughly so that the peel comes off. Then we roast the chickpeas in the oven and add the melted chocolate. The best way to melt the chocolate is over a water bath. The bowl shouldn’t touch the water and only get hot from the steam. As soon as the chocolate becomes liquid, you can take it off the heat and set it aside. Stir occasionally until the chocolate is completely melted.

When it comes to cookies, I can’t think of a healthier option. With these nutritional values, the chickpea biscuits can be used without any problems.

2200 kcal, 100g protein, 300g carbs, 70g fats per day.

Step by Step Instructions

Step 1

Wash and peel the chickpeas thoroughly.

Step 2

Roast the chickpeas for 20 minutes at 160 degrees.

 

Step 3

Melt the chocolate over a double boiler and stir in the chickpeas.

Step 4

Now spread the liquid dough with a tablespoon on baking paper and place in the refrigerator.

Step 5

The cookies are ready after 1-2 hours or as soon as the chocolate has hardened.
