Do you love chocolate chip cookies? Subway has really delicious cookies, I have to give them that. Unfortunately, they are neither vegan nor healthy, which is why they have long been out of the question for me. That’s why I developed my own recipe for deliciously soft cookies like Subway. From just 4 ingredients, a dough without egg, refined sugar, wheat or artificial additives is created in under 5 minutes. You don’t even need baking powder – let alone an oven. The recipe is made faster than if you would buy vegan subway cookies – and also much cheaper! Have fun trying it out!

Cookies like Subway: You need that

Whether white chip macadamia nut, raspberry cheesecake or chocolate chip cookies: Subway is famous for its delicious cookies. They’re soft, chewy, sweet, and kind of addictive. Unfortunately, they also contain many ingredients that are not exactly healthy. The solution: just bake it yourself! For my simple recipe you only need 4 basic ingredients, which you are guaranteed to already have at home.

Subway cookies without eggs: Here’s how

Keep it simple: You don’t need any complicated ingredients to bake vegan!

  1. banana instead of egg

Mashed banana really is the most ingenious egg substitute when it comes to vegan baking. Whether muffins, cakes or biscuits: The crushed fruit not only holds the dough together well, but also makes it moist and sweet

  1. spelled instead of wheat

Wheat flour can almost always be replaced with spelled flour. Although it also contains gluten, many people tolerate it better

  1. Peanut Butter: What’s Even Better Than Chocolate Chip Cookies? Cookies with peanut butter. Why not combine both? Peanut butter is not only delicious, but also ensures a good bond. This is our butter substitute, so to speak

  1. Chocolate chips: Of course, cookies like Subway also need vegan chocolate pieces. Here you can take drops that are sweetened with erythritol or consist of 100% cocoa mass. Or you break a piece of vegan chocolate into smaller pieces

      Ingredients

      • 1/2 Banane
      • 2 EL Dinkelmehl
      • 1 EL Erdnussbutter
      • 5 g Schokoladenstücke

      Instructions

      • Die Banane mit einer Gabel zerdrücken. Das Fruchtmus gründlich mit der Erdnussbutter und dem Mehl verrühren.
      • Den Teig zu einem runden Cookie formen und auf einen mitBackpapier belegten Teller geben. Die Schokoladenstücke darauf setzen.
      • Für 1 Minute in der Mikrowelle backen. Herausnehmen, 2 Minuten abkühlen lassen und genießen!

      Theoretisch kannst du einfach deine eigene vegane Subway Cookies Range backen! Werde gerne kreativ und experimentiere mit verschiedenen Zutaten, um dieses Rezept abzuwandeln. Wie wäre es zum Beispiel mit gehackten Macadamiakernen, weißer Schokolade oder Mandeln? Auch Kokosraspeln und Kakaopulver könntest du verwenden!
