Fast pizza dough with dry yeast

Why is this spelled pizza baked with dry yeast and not fresh yeast? I find it less complicated – because dry yeast can be stored much longer and is easier to dose. Above all, you only need a tiny amount: 5 grams are enough to bake the perfect spelled pizza. The best thing about this spelled pizza dough recipe: It’s so quick! Since the base should be nice and thin and crispy, the dough does not have to rise for hours. Simply mix the ingredients, knead briefly, leave to rest for a few minutes and you have a simple pizza dough without resting time – at least almost. Ideal when you’re really hungry or just don’t have the motivation to stand in the kitchen for a long time.

Spelled pizza: Can you prepare the pizza dough?

Another option: for example, prepare the pizza dough the evening before or during the lunch break, put it in the fridge and roll it out, top it and bake it if necessary. This recipe is also good for meal prep. In this case, the yeast has a little more time to develop, which may result in a more airy dough – but that shouldn’t be a disadvantage. You should only roll out and cover the spelled pizza just before baking – otherwise it will be a soggy affair.

Is spelled pizza healthier?

In my opinion, spelled pizza is healthier than the classic wheat flour version. Because: White flour contains almost no fiber and therefore does not fill you up well. The valuable ingredients of the cereal grains are also missing, since the flour is very heavily processed and cleaned. Spelled flour contains more vitamins, minerals, and fiber, making it a better choice. Compared to take-out, frozen and most restaurant pizzas, this spelled pizza is healthier. Of course, the topping is also crucial – and it can be made healthy and delicious. Incidentally, wholemeal spelled flour is particularly wholesome and rich in nutrients – but it needs a little more liquid if you want to adapt the recipe.

  • Ofen


  • 175 ml lauwarmes Wasser
  • 5 g Trockenhefe
  • 270 g Dinkelmehl
  • 1 TL Salz
  • 1 TL Zucker
  • 15 ml Olivenöl
  • 50 g Tomatensauce
  • 30 g veganer Käse
  • 30 g Zwiebeln
  • 30 g Paprika
  • frischer Basilikum


  • Trockenhefe im lauwarmen Wasser auflösen und für 5 Minuten zur Seite stellen. So wird die Hefe aktiviert.
  • Anschließend Mehl, Olivenöl und Salz dazugeben und alles durchkneten, bis ein geschmeidiger Teig entstanden ist. Mit einem Geschirrtuch abdecken und für 5 Minuten an einem warmen Platz gehen lassen. Inzwischen den Backofen auf 220 °C vorheizen.
  • Den Teig auf einem mit Mehl bestäubten Backpapier ausrollen. Gegebenenfalls auch den Teig mit etwas Mehl bestäuben, damit er nicht so klebt. Das Ganze auf ein Blech heben.
  • Nun die Tomatensauce, den veganen Käse und das vorbereitete Gemüse auf dem Teig verteilen. Die Pizza für 15 Minuten im vorgeheizten Ofen backen.
  • Pizza aus dem Ofen nehmen und warm genießen. Nach Geschmack mit frischem Basilikum und Frühlingszwiebeln garnieren. Guten Appetit!
