Super delicious, made quickly, with just a few ingredients and without a guilty conscience: you have to try this no-bake chocolate cake! While classic chocolate cakes consist mainly of wheat flour, sugar and butter, I use vegan and wholesome ingredients in my recipe. Almonds, dates, coconut milk, vegan chocolate and tofu create the perfect no-bake cake in just a few minutes!

No Bake Torte: My secret ingredient

The ultimate secret ingredient in this recipe? Tofu! And not silken tofu, but normal natural tofu. It can not only be used for savory dishes, but also works great with desserts. Have you ever heard people say “Tofu doesn’t taste like anything!”? If you don’t season it, that’s true – and that’s exactly what we’re using here. In combination with low-fat coconut milk and chocolate, it makes for a super creamy but low-calorie filling. Strictly speaking, you could also call this no-bake cake a tofu cake. Incidentally, tofu also works great in baked cakes and is a good egg substitute. It has a nice binding ability, is easy to work with and is widely available. It’s also high in protein, which is another plus.

No bake cake: Nuts instead of flour

A cake base without baking can be easily made from nuts and dates. In this case we use ground almonds as a flour substitute. The dates bind the chopped nuts and hold them together, creating a healthy and tasty pie crust. Alternatively, you could also use rolled oats, walnuts, hazelnuts, grated coconut or a mix of different types. Other dried fruits, such as apricots or cherries, also work in place of dates. The main thing is that they are nice and sticky and juicy! By the way, dates are not just dates: Medjoul dates are particularly soft and therefore very suitable for no-bake desserts. As a rule, however, they are also somewhat more expensive than other varieties. Whatever you decide: The No Bake cake works with all dates.

Equipment for the no bake cake

You don’t need an oven or a mixer to make a no-bake cake. But you should have a food processor or a blender for this – the more powerful it is, the faster and easier the No Bake chocolate cake can be prepared. I would rather advise against using a hand blender because the mass is too sticky. – especially with the cake base without baking. Also, be careful not to mix the ingredients for the bottom of the no bake cake too much. The dough should hold together but still have some structure. The filling should be nice and creamy and smooth. A model with a removable base is ideal for the baking pan.

  • 110 g gemahlene Mandeln
  • 15 Datteln (8Medjoul-Datteln)
  • 1/4 TL Salz
  • 1 TL Vanille-Extrakt


  • 150 ml fettarme Kokosmilch dicken Teil
  • 135 g Zartbitterschokolade
  • 100 g Naturtofu
  • 1 TL Vanille Extrakt
  • 1/4 TL Salz



  • Datteln entkernen und grob hacken. Mandeln in einer Küchenmaschine oder im Mixer grob zerkleinern, sodass eine Art Mandelmehl entsteht. Datteln,Salz und Vanille zugeben und alles zum klebrigen Teig verarbeiten. Auf demBoden einer Springform (16 cm Durchmesser) verteilen und gleichmäßig festdrücken.
  • Schokolade hacken und über einem Wasserbad schmelzen.Tofu zerbröseln oder grob würfeln. Mit Kokosmilch, Tofu, Salz und Vanille imMixer zu einer glatten Masse pürieren. Auf den Boden in die Springform gießen, glatt streichen und für mindestens eine Stunde in den Kühlschrank stellen.
  • Für die Deko getrocknete Blüten, frische Beeren, gehackte Schokolade und Kokosraspeln auf der No Bake Torte verteilen. Fertig ist ein super schneller Kuchen ohne Backen. In Stücke schneiden und genießen!
