- 130 g Erdnussbutter
- 90 g Erythrit
- 1 TL Vanille Extrakt
- 1 TL Natron
- 1/2 TL Salz (bei ungesalzener Erdnussbutter)
- 3 EL Mandelmilch
- 60 g Dinkelmehl
Instructions
- Backofen auf 180 °C vorheizen und ein Blech mit Backpapier belegen.
- Erythrit, Natron, Vanille und Erdnussbutter in einer Schüssel zu einem glatten Teig verrühren.Verwendest du ungesalzene Erdnussbutter, gib auch etwas Salz hinzu. Nun Mandelmilch und Mehl untermischen und rühren, bis der Teig fester wird. Ein bisschen klebrig darf er sein.
- Aus demTeig 9 kleine Kügelchen formen und zwischen den Händen platt drücken. Mit einerGabel leicht eindrücken, sodass ein Gittermuster auf der Oberseite entsteht.Auf das Blech setzen und 11-13 Minuten im vorgeheizten Ofen backen.
- Backe die Erdnussbutter Cookies 11 Minuten, wenn du sie softer magst und 13 Minuten für mehr Crunch. Je nach Ofen variiert die Backzeit natürlich auch immer etwas.
