Is spinach feta pasta vegan?
Although sheep’s cheese is actually an animal product, there are now many plant-based alternatives in almost every supermarket. This spinach feta recipe is of course vegan – and you don’t need any exotic ingredients for it. Fresh vegetables, some herbs, pasta and a vegan cheese alternative are enough to conjure up a really great dish. If you can’t find vegan sheep’s cheese, you can also simply prepare the one-pot recipe with plant-based cheese spread or a cream cheese alternative of your choice.

Spinach feta pan: Mediterranean classic

With juicy tomatoes, fresh spinach, creamy “cheese” and lots of herbs, this combination is an absolute classic of Mediterranean cuisine. The dish is reminiscent of sun, vacation and lightness and tastes like a mini vacation in the south. Is it because we can’t really travel at the moment? No idea – at least this one pot pasta has also gone really viral on Instagram in the last few months. It is certainly also due to the fact that this recipe is a real taste explosion despite fewer ingredients and you don’t have to go to the delicatessen first. Simple, but super sophisticated – that’s what makes this dish so awesome!

For my calculation I used the following numbers:
2200 kcal, 100g proteins, 300g carbohydrates, 70g fats per day.

This one pot recipe has another plus point: it’s high in protein! This is simply because I use chickpea noodles here, which contain a whopping 22 g of protein per 100 g. In combination with the light vegetables, the ideal post-workout meal is created. Of course, the spinach pan also tastes good with conventional durum wheat pasta, spelled pasta or another high-protein variety. Try lentil penne, pea fusili or edamame spaghetti. Also delicious if you don’t feel like pasta: Rice with spinach with tomatoes and feta cheese! For example, try this recipe for one pot with smoked tofu, rice and peppers!
Vegan Spinach Feta Recipes
If you love the combination of spinach with feta and tomatoes, you can be inspired by this recipe and try out your own creations. Ideas would be, for example, a vegan spinach feta casserole, a spinach feta wrap or a spinach feta lasagna. The flavors also come into their own on pizza, where you could add a few pine nuts for the crunch. My simple recipe for pizza dough made from spelled flour or the gluten-free pizza dough made from oatmeal and cucumber are suitable here. You will surely come up with more delicious ideas!

Spinat Feta Pfanne mit Kichererbsennudeln
Equipment
- Pfanne
- Ofen
Ingredients
- 150 g Babyspinat
- 100 g Kirschtomaten
- 100 g veganer Feta
- 1 TL Salz
- 1 TL Pfeffer
- 1 TL getrocknete Kräuter
- 1 EL Olivenöl
- 250 g Kichererbsennudeln
- 100 ml Nudelwasser
Instructions
- Backofen auf 180 °C vorheizen. Spinat und Tomaten waschen und abtrocknen.
- Eine große ofenfeste Pfanne auf dem Herd erwärmen. Erst den Spinat, dann die Tomaten hineingeben und den Feta im ganzen Stück darauflegen. Zuletzt die Gewürze und das Olivenöl darüber geben.
- Die Pfanne in den vorgeheizten Ofen stellen und alles backen, bis der vegane Feta geschmolzen ist. In der Zwischenzeit die Nudeln nach Packungsangabe kochen. Anschließend abgießen und 100 ml des Kochwassers auffangen.
- Die Spinat Feta Pfanne aus dem Ofen holen und mit den Nudeln vermengen. Das aufgefangene Nudelwasser zugeben und alles durchrühren. Fertig!
