Take a look at these delicious sugar free gingerbread cookies. I’ve worked on it for a long time and I think the result is incredibly delicious. In addition, the gingerbread cookies are rich in protein, juicy and quick to prepare. It was important to me to create a healthy gingerbread recipe as we nibble on so many delicacies over the holidays;)

Sugar free gingerbread cookies

Ingredients

 

  • 50g spelled flour
  • 25g cocoa powder
  • 25g protein powder nutrition-plus
  • 80ml almond milk
  • 50 mashed banana or apple sauce
  • 20ml coconut oil
  • 30g erythritol
  • lemon and orange zest
  • 1/2 tsp cinnamon
  • 1 tsp gingerbread spice
  • 1 tsp baking powder
  • a pinch of salt
  • 6 wafers

The delicious protein gingerbread can be covered with chocolate afterwards or garnished with almonds. When it comes to chocolate, I recommend melting an 85% chocolate because it contains significantly less sugar. With gingerbread, we paid so much attention to healthy ingredients that we don’t want to ignore the chocolate coating either and want to switch to a healthier variant here too. This recipe should make the Elisen gingerbread as healthy as possible without sacrificing taste, but it is up to you how it should look exactly 🙂

Step-by-step instructions

Mix all of the dry ingredients.

Melt the coconut oil in the microwave and mix it with the liquid ingredients.

Now stir into a dough and spread the dough onto the wafers with a tablespoon. The dough is enough for about 8 gingerbread cookies.

Bake the gingerbread for 13 minutes at 180 degrees.

Cover the finished gingerbread with chocolate as you wish.
