Is classic cucumber salad vegan?
As with so many dishes, there are countless variations of cucumber salad. Some of them contain cream, yoghurt or sour cream, which of course is not vegan – and at the same time quite high in calories. However, if you prepare it with a spicy marinade made from soy sauce, rice vinegar, a little oil and dill, as in this recipe, the cucumber salad becomes vegan. Of course you could also use soy cream or soy yoghurt, but then the light dish would become a small calorie bomb. My recipe is also a low-carb cucumber salad, which definitely belongs in the fitness food category. Fresh, light, low in calories and delicious!

Soy sauce and rice vinegar, sesame and chili: I was inspired by Asian cuisine for this recipe. The combination of Japanese components with typical German ingredients such as dill and linseed oil is super exciting. You can eat it as a light side dish with baked tofu, rice dishes or sushi as well as a sandwich, vegan sausages or meatballs. What was also important to me: It is a cucumber salad without sugar, which is only refined with a little date sweetness. Linseed oil contains healthy omega-3 fatty acids and I avoided fatty cream. So it’s a healthy cucumber salad made from just a few, but high-quality ingredients. Since the most important vitamins are under the skin, the cucumber is not peeled. Therefore, I would recommend you to buy an organic cucumber.
Suitable dishes for vegan cucumber salad

Vegan Cucumber Salad: Storage and Shelf Life
Of course, the best cucumber salad doesn’t last long – it’s far too tasty for that. But if you really want to prepare larger quantities, you can simply store it in an airtight Tupperware container in the fridge. Here it stays fresh and crisp for at least two days – I wouldn’t necessarily keep it longer. But how quickly does cucumber salad spoil? Being vegan means you are on the safe side, since no cream, yoghurt or other perishable ingredients are used. Date sugar, salt and vinegar also contribute to a good shelf life. Vegan cucumber salad should also be eaten within 3-4 days.
Vegan cucumber salad: Here’s how

- 1 Gurke
- 15 ml Sojasauce
- 30 ml Reisessig
- 15 ml Olivenöl
- 1 TL Dattelzucker
- 1 TL Dill
- 1/2 TL Salz
- 1 TL Sesam
- 1 TL Chili
- Gurke waschen und in feine Scheiben schneiden.
- Alle weiteren Zutaten in eine Schüssel geben und mischen. Gurkenscheiben zugeben und alles gründlich durchrühren. Optional eine Weile im Kühlschrank durchziehen lassen. Das war’s auch schon – fertig ist ein leckerer Gurkensalat!
