Vegan Feta Rice Pan: Feta cheese without sheep

Spicy, aromatic and mild at the same time: the combination of rice, vegetables and sheep’s cheese is simply brilliant, as most of us will certainly agree. But what if you, as a veggie, fancy a vegan feta rice pan? After all, the Mediterranean cheese specialty consists of either sheep’s or cow’s milk. Fortunately, there are now various vegan feta alternatives in the supermarket, so pretty much any dish can be prepared in plant-based form. Best example: My Spinach Feta Pasta!

My one pot pan contains filling rice, lots of fresh vegetables, spicy smoked tofu, crunchy peanuts and creamy vegan cheese. So, to call it simply “feta and rice stir-fry” would be an understatement – after all, there’s so much more goodness in it. The tofu increases the protein content and brings a great taste to the dish, the nuts are crunchy and also rich in protein, the vegetables are rich in vitamins and conjure up color on the plate – and the combination of everything is incredibly delicious. Which vegan feta is the best

Vegan feta cheese sounds contradictory at first – but at least everyone knows what is meant! Whether Violife Feta, Bedda Feta or Simply V Feta: You have to try which product you like best. It’s great that there is so much choice that everyone will find their personal favourite. The vegan feta rice pan definitely works with all variants – I just wouldn’t necessarily choose tofu sheep’s cheese. Because the downside to this is that it lacks the meltdown—coconut oil and starch-based products work better. Incidentally, some of these are also enriched with vitamin B12, which is great for a vegan diet.

Vegan Feta Rice Pan: Recipe

Fancy the best vegan rice with feta? As always, this recipe is super quick and easy to prepare. For a particularly healthy version you can use whole grain rice, for a lower carb version I recommend a rice variant made from legumes. Otherwise, all you need is a large skillet and your desired ingredients! Have fun cooking!

  • Pfanne

Ingredients

  • 120 g Reis
  • 50 g Paprika
  • 50 g geräucherter Tofu
  • 30 g Zwiebel
  • 100 g Tomaten
  • 100 g Champignons
  • 40 g Erdnüsse
  • 1 TL Pfeffer
  • 1 TL Salz
  • 1 TL Chili
  • 1 TL Knoblauch
  • 1 TL Kurkuma
  • 450 ml Gemüsebrühe
  • 50 g veganer Feta

Instructions

  • Den Reis waschen und abtropfen lassen. Das Gemüse ebenfalls waschen und in 1 cm kleine Würfel schneiden.
  • Nun alle Zutaten, samt Gemüsebrühe und Gewürzen, in eine Pfanne geben und vermischen. Alles unter Rühren erhitzen, den veganen Feta in die Mitte setzen und alles bei kleiner Hitze zugedeckt für ca. 40 Minuten köcheln lassen.
  • Die vegane Feta Reis Pfanne abschmecken, nach Geschmack mit frischem Basilikum garnieren und genießen.
