One Pot Gnocchi: Everything in one pan.

One pot dishes have seen an incredible amount of hype over the past few years. Rightly so, in my opinion – because you can hardly prepare a meal faster. Especially during the week, when many people find it difficult to cook fresh and healthy, this quick gnocchi pan is simply awesome. Because one pot means that everything is prepared in a single pot. Or just in a pan. This not only saves a lot of time, but also shortens the washing up time after eating. Incidentally, these One Pot Gnocchi are just one of the many possibilities that this method of preparation offers. You can also cook one pot pasta with potato noodles, a rice one pot dish with vegetables or one pot feta vegan.
One Pot Gnocchi with lots of vegetables
For this recipe I chose a gnocchi pepper pan. The sweet aroma of the sauce, which consists of roasted paprika and cashew nuts, goes perfectly with potato gnocchi. Onions, tomatoes, garlic and spices round off the whole thing and turn this dish into an all-round healthy, feel-good meal. Incidentally, it is also a great way to increase the daily intake of vegetables for children – because prepared so deliciously, the little ones are guaranteed to taste good too!

One Pot Gnocchi: What to Watch Out
So that the One Pot Gnocchi turns out perfectly, I have put together a few tips for you here. Especially when shopping: take gnocchi without an egg! After all, the dish is supposed to be vegan.
Buy vegan gnocchi: Are gnocchi vegan? Usually yes, but you should always check the packaging in advance. The recipe doesn’t really have to contain more than flour, starch and potatoes – maybe even spices, but that’s it. You can buy vegan gnocchi in most supermarkets, health food stores and health food stores, so that shouldn’t be a problem. There are even many gluten-free and protein-rich variants, for example made from lentils.
Roast cashew nuts: You might be surprised in the recipe that the cashew nuts for the sauce are put in the oven. But that’s right – because roasted cashews have an incredibly delicious aroma. I got this tip myself from a star chef and have been using it with great pleasure ever since. The taste is simply unique and gives the sauce that certain something. To prevent the nuts from burning, however, the oven temperature must be set to a low level.
Cooking one pot gnocchi: that’s how it works

– 200 g gnocchi (precooked, from the package)
– 1 clove of garlic
– 1/2 onion
– 1/2 bell pepper
– 30 g of pine nuts
– 150 ml paprika sauce (see below, alternatively tomato sauce)
For the paprika sauce:
– 3 red peppers
– 2 onions
– 3 tomatoes
– 2 cloves of garlic
– 20 ml of olive oil
– 2 teaspoons of paprika powder
– 1 teaspoon chilli
– Salt and pepper
– 50 g of cashew nuts
For the paprika sauce, preheat the oven to 160 ° C. Wash and dice the vegetables. Peel and halve the garlic. Mix with the cashew nuts and a little olive oil and place everything on a baking sheet. Roast for 40 minutes. Then put in a blender with paprika powder, chilli, salt and pepper and puree to a fine sauce.

For the quick gnocchi pan, first peel and chop the garlic and onion. Core the paprika and cut into pieces.
Heat some oil in a non-stick pan and fry the garlic and onion in it. Add paprika, pine nuts and gnocchi as well as the prepared paprika sauce and simmer for 10 minutes
Serve with spring onions and freshly ground pepper to taste.
