6 simple ingredients everyone has at home. This is important to me when it comes to healthy and tasty desserts. These super delicious vegan cookies bring everything with you and are guaranteed to always be a success. If you are not a fan of sugar substitutes, simply swap erythritol for coconut blossom sugar, date syrup or agave syrup. The spelled flour can easily be replaced with oat flour.

  • 130g peanut butter
  • 90g erythritol 
  • 3 tbsp almond milk
  • 1 tsp vanilla extract
  • 60g spelt flour 
  • 1 tsp baking soda
  • 1/2 tsp salt (only if the peanut butter is unsalted)

Have you ever made your own peanut butter? It’s super easy and costs a fraction of the finished peanut butter. This is how it works: Roast the peanuts in the oven for 20 minutes at 180 degrees and then put them directly into a food processor, season with 1 teaspoon of salt per 500g and mix. Starts with an easy level and increases every minute. After about 5 minutes, the peanut butter should be creamy.

Step by Step Instructions

Step 1

Add sugar, baking soda, vanilla, peanut butter to a bowl and stir until well combined.

Step 2

Add almond milk and flour and knete until you get a dough.

 

Step 3

Form 9 balls and shape into cookies. 

Step 4

Press in with a fork and bake 11-13 minutes at 180 degrees. 

Step 5

11 Minutes are softer cookies, 13 minutes are a bit harder. Your decision 😉

Add to Bowl 1

  • 3 tbsp almond milk
  • 60 g spelt flour

Instructions

  • Add all ingredients for Bowl 1 to a bowl and combine.
  • Add remaining ingredients until you get a dough.
  • Form 9 balls and shape them into cookies.
  • Press with a fork and bake 11-13 minutes at 180 degrees.
  • Let it cool down for 10 minutes and enjoy.
