Vegan cream cheese

We only need 6 ingredients to make this super tasty vegan spread. My variant is also enriched with protein powder, but you can leave it out or replace it with oatmeal. The healthy spread can also be prepared in various creations. Please check Niko Rittenau for this, I have modified the original recipe from him a little.

  • 1 can peas (280g)
  • 75g cashews
  • 15g nutritional yeast
  • 1 garlic clove
  • 30g neutral protein from nutri-plus 
  • juice of a half lemon
  • 1 tsp salt
  • a handful fresh basil

Only a few ingredients are needed to make this vegan cream cheese. We start by adding the whole can of peas, including the liquid, to the blender. The liquid is important to make the vegan cream cheese creamy. Then we add all the ingredients and mix until we have achieved the desired consistency. Personally, I like to add protein powder to vegan cream cheese to make the dish even more nutritious. The protein powder can, however, be replaced with ground oats. Alternatively, you can leave out the oats, but I recommend sieving the peas and adding them to the mixer without any liquid.

If you compare the nutritional values of this vegan cream cheese  with purchased cream cheese´s, you will see that there is no healthier alternative. I spent a long time puffing and trying to create the healthiest vegan cheese alternative and I was super satisfied with this result.

2200 kcal, 100g protein, 300g carbs, 70g fats per day.

Step by Step Instructions

Step 1

Easily add all ingredients to a mixer.

Step 2

Please make sure that you only use the juice of the lemon. The seeds have a lot of bitter substances. 

 

Step 3

When mixing, also make sure to put the peas in the mixer first and then the remaining ingredients.

Step 4

Serve with bread, pasta or eat with veggies.

Step 5

Store in the fridge for at least 7 days.
