- 50 g spelt flour
- 25 g cocoa powder
- 25 g chocolate protein powder
- 80 ml almond milk
- 50 g mashed banana
- 20 ml coconut oil
- 30 g erythritol
- 1/2 tsp orange zest
- 1/2 tsp lemon zest
- 1/2 tsp cinnamon
- 1 tsp baking powder
- 1 tsp gingerbread spice
- 1/4 tsp salt
Mix all of the dry ingredients.
Melt the coconut oil in the microwave and mix it with the liquid ingredients.
Now stir into a dough and spread the dough onto the wafers with a tablespoon. The dough is enough for about 8 gingerbread cookies.
Bake the gingerbread for 13 minutes at 180 degrees.
Cover the finished gingerbread with chocolate as you wish.
