  • 1 tomato
  • 1/2 onion
  • 50g peas
  • 1 bell pepper
  • 50g chickpeas
  • 500ml vegetable broth
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tbsp dried herbs
  • 1 tsp garlic powder
  • 1/2 tsp cumin
  • 30g vegan cheese

The list is full of healthy ingredients wich have great benefits for your body. Use tofu or tempeh for a high protein version and add a bit of soy sauce. If you dont have a vegetable broth at home, make it yourself. Super quick and easy. How? Once you cut all your veggies for this recipe. Use the skin, the seeds and everything you throw away and boil it in water with salt and pepper. 40 Minutes later your vegetable broth is ready to be used. Store the broth in the fridge or freeze in.

Step by Step Instructions

Step 1

Cut your veggies in small pieces. Use the skin of the veggies etc for your own vegetable broth, if requried.

Step 2

Add all ingredients into the pan, except of the cheese and the spring onions.

 

Step 3

Bring to boil and let it simmer for 40 minutes.

Step 4

Once the broth is dissolved, add vegan cheese and stir until creamy.

Step 5

Garnish with spring onions and enjoy this perfect dish.
